HOMEMADE ENCHILADA SAUCE

1 tablespoon olive or avocado oil
1 tablespoon onion powder
1 tablespoon garlic powder
3 tablespoons chili powder
1 tablespoon cumin
1/4 teaspoon oregano
1 teaspoon sugar
2 cups crushed tomatoes (or 16 ounces tomato sauce)
1 cup chicken broth

Mix everything together in a medium sauce pot. Bring up to a simmer and simmer about 8 minutes.  At this point you can use it as is or run it through a blender, food processor or use a stick blender to smooth it out.  It's a little textured from the spices. Makes 3 cups.
