HEALTHY PEANUT BUTTER OATMEAL COOKIES
adapted from a Bariatric Cookbook
1 cup quick cooking oatmeal
2 tablespoons flax seeds*
1 teaspoon cinnamon
pinch salt
1/2 cup granulated sweetner, I used Truvia Sweet Complete
1/2 cup no sugar added peanut butter, or type of your choice
1 egg
1 teaspoon vanilla
Mix dry ingredients together then add remaining ingredients. Stir until well combined and
there are no dry spots of oatmeal mixture left in the bowl. Drop by small scoops or spoonfulls
onto a parchment paper lined baking sheet. Smooth balls together if needed and press each
one down with a fork. Bake at 325 for 10 to 15 minutes. You only need them to get lightly
browned on the bottom. Makes approximately 14 cookies.
*I only had ground flax seeds but I would recommend using the actual seeds as the original
recipe states. I think the ground ones may have made the cookie dryer than with the seeds.
