GRAPE SALAD
1 pound grapes, any kind you like. You can mix and match them if you like.
2 ounces light cream cheese, softened
1/4 cup nonfat plain Greek yogurt
1/8 cup monkfruit sweetener, or sweetener of choice
1/2 teaspoon vanilla
1 tablespoon chopped pecans
1 tablespoon brown sugar substitute, I use monkfruit
Wash grapes and let dry completely. In a stand mixer or with electric beaters whip cream cheese
until smooth. Add yogurt, sweetener, and vanilla. Beat until completely smooth and no lumps of cream
cheese remain. Fold in grapes and pecans. Sprinkle top with brown sugar. Store in refrigerator.
Makes 5 servings of around 100 - 104 grams each. All plans 2 points.
