GINGERBREAD BAKED OATMEAL

2 cups old fashioned oatmeal
2 cups unsweetened almond or cashew milk
1/4 cup unsweetened applesauce
2 tablespoons sugar free pancake syrup
1 1/2 tablespoons molasses
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
2 teaspoons ground cinnamon
1 teaspoon ground cloves
½ teaspoon ground ginger
1/2 teaspoon salt
GLAZE
3/4 cup powdered sugar substitute, I use Lakanto
1 teaspoon vanilla
2 tablespoons cashew or almond milk
For the baked oatmeal mix dry ingredients in a big bowl then add remaining wet ingredients and stir well. Bake at 350 in a greased 9 x 9 inch dish for 35 minutes. While it is baking mix up the glaze. In a small bowl add vanilla to the powdered sugar. Then add 2 tablespoons milk. If it's not the consistency you like add a little bit more milk at a time until you reaches it. While the oatmeal is still hot from the oven spread the glaze all over the top. It will melt as you spread it and that's what you want. Let cool about 20 minutes before cutting.
Makes 6 servings.
