FUDGY HALLOWEEN SQUARES
1 can black beans, drained and rinsed well
1/2 cup granulated sugar substitute, I used Lakanto monkfruit
1/4 cup cocoa powder
1/4 cup I can't Believe It's Not Butter Light
3 eggs
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon vanilla
2 tablespoons all purpose flour
1/2 cup Lily's sugar free chocolate chips
4 - 5 tablespoons white chocolate chips
1 teaspoon vegetable oil
8 teaspoons sprinkles, or up to 5 tablespoons
In a food processor add beans, sugar substitute, cocoa powder, butter, eggs, salt, baking powder and vanilla. Process until very smooth, scraping down the sides of the bowl a couple times. The batter will be thin. Then add flour and chocolate chips. Process in pulses just until blended. Pour into a greased and parchment paper lined 8 x 8 inch baking dish. The parchment paper is optional but I wanted to make sure once cooled they would easily come out of the baking dish. Bake at 350 for 25 - 35 minutes or until a toothpick in the center comes out clean but being careful not to burn the edges. Lift parchment from pan and allow to cool completely before topping.
For the drizzle mix white chocolate chips and oil in a microwave safe bowl and cook in 30 second intervals stirring each time until melted and smooth. Mine only took one minute. With a spoon drizzle white chocolate over top of squares and then decorate with sprinkle. I used 4 different kinds, one each corner but decorate as you wish. The possibilities are endless and these can be decorated for any holiday. Allow chocolate to harden before cutting into 16 squares.
