FRUITY YOGURT MUFFINS
adapted from Gooseberry Patch
1 cup quick cooking oatmeal
1/2 cup brown sugar substitute, I use Lakanto Golden*
1 cup nonfat plain Greek yogurt
1/2 cup unsweetened applesauce
1 egg, beaten
1 teaspoon vanilla
1 cup all purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup finely chopped fresh or frozen fruit
In a bowl combine egg, yogurt, applesauce, vanilla, sweetener and oatmeal. Beat well. Sift together flour, salt, baking powder, baking soda and add to the oatmeal mixture. Sprinkle with fruit and stir well to combine. Fill greased or paper lined muffin tins 2/3 full. Bake at 400 for about 17 minutes or until toothpick comes out clean. Makes 18.
