FRIED PICKLE CHAFFLE STICKS

1 egg large
1/4 cup pork rind crumbs
1/2 cup shredded mozzarella cheese
1 tablespoon pickle juice
6-8 thin pickle slices
Mix together everything except pickles. Spread about half the batter onto a hot waffle iron, top evenly with pickles and then spread the remaining batter over top to cover the pickles. Cook until browned and fully cooked. Once cooled cut into sticks with a pizza cutter. Serve as is or with ranch dressing or your favorite dip.
Makes 1 serving, not including any dip.

* I found these to taste much better and more like a fried pickle once they were completely cool and had time to set up. When warm they taste a little more cheesy.
