FRIED GREEN TOMATOES
firm green tomatoes, with no visible signs of pink or red
self-rising corn meal mix
salt & pepper to taste
vegetable oil
Onion Petal Sauce, optional
Core tomatoes and cut small piece off the bottom then slice tomatoes. Do not slice too thick or they tend to get too done on the outside before the tomato is cooked through. While frying pan is preheating mix cornmeal mix, salt and pepper in a small dish. Once pan is hot add oil. Dredge each tomato slice in cornmeal mix and press on both sides to make sure it sticks and if fully coated. Place the tomatoes one by one in the hot oil. Fry on both sides until browned and tender, turning as needed. If pan gets too dry add just a bit more oil to keep the cornmeal from burning. Remove to a paper towel lined plate to drain. Serve with onion petal sauce if desired.
****To count points you will need to measure how much cornmeal mix you start with and then how much you're left with. Substract the two and that's how much to put in the recipe builder. Also measure the oil and add that to the builder. I used a total of 3/8 cup for 2 tomatoes. The number of servings will be how many slices of tomatoes you have.
