FRIED CORN

my original pre-WW recipe uses a stick of real butter and heavy whipping cream! 

2 pounds frozen corn
4 tablespoons Country Crock Light
8 ounces fat free half & half
pinch sugar
salt and pepper

Melt butter in large frying pan then add remaining ingredients. Cook, uncovered,  over medium-high heat, stirring constantly, until cream is absorbed.
Makes approximately 8 - 1/3 cup servings.

I calculate the points just a little different than normal recipes.  This starts with 1 cup of liquid half & half and ends with only what's adhered to the corn after it evaporates.  I only put half the amount of half & half in the recipe builder to make up for this evaporation and loss of volume.
