FRESH CORN CAKES
2 ears fresh corn on the cob, cut off the cob
2 - 4 green onions, sliced
1 cup all purpose flour
1/4 cup plain cornmeal
1 tablespoon sugar, or sweetener of choice
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup skim milk
2 eggs
almond milk if needed
Mix all the dry ingredients together and whisk until combined. Add corn and green onions and stir to evenly coat. In a separate bowl beat milk and eggs and pour into corn mixture. Stir only to combine and leave no dry spots. If needed for consistency add a little bit of almond milk. This will not add any points. Drop by large spoonfuls onto hot pan which has been sprayed with olive oil or other spray. Cook until browned on both sides and middle is done, approximately 8 - 10 minutes. Makes 12.
