FATHEAD PIZZA DOUGH

1 1/2 cups mozzarella cheese
2 tablespoons cream cheese, cubed and softened
2 eggs, beaten
1/3 cup coconut flour

1 cup favorite sauce
extra shredded mozzarella cheese
pepperoni or other toppings

Combine mozzarella and cream cheese in a microwave safe bowl and microwave 45 seconds.  Remove and stir. Add eggs and coconut flour and microwave another 45 seconds.  Remove and stir.  Turn out onto a cutting board or other surface and knead with your hands until all the flour is incorporated and the dough is smooth.  Roll out onto a large baking stone that has been sprayed generously with cooking spray. I haven't baked it on a metal pan before so I'm not sure how it turns out but I would just be sure to spray it really well.  Prick the crust all over with a fork and bake at 425 for 6 minutes.  Remove from oven and prick any bubbled up areas, return to oven and bake another 3 minutes.  Be very careful not to go over 3 minutes or you risk the pizza overbaking in the next step and sticking to the pan (as it did in my video).  Top with 1 cup of your favorite sauce and more shredded mozzarella. Add any toppings you like and bake up to 8 more minutes until cheese is melted and crust is starting to brown. Do not overbake!  Let cool slightly before cutting.  Makes 8 slices.
1 net carb per slice of just the dough.  You'll need to calculate the sauce, cheese and any toppings you add separately.
