FATHEAD DOUGH BUNS
from Ditch the Carbs
1 3/4 cup shredded mozzarella cheese
3/4 cup almond flour
2 tablespoons full fat cream cheese
1 egg
1 teaspoon baking powder
pinch salt to taste
sesame seeds, optional
Mix the shredded cheese, almond flour and cream cheese in a microwaveable bowl and microwave on HIGH for 1 minute.
Remove from microwave and stir to incorporate cream cheese. Add the egg, baking powder, salt and any other seasoning
you like. Mix well but do not overmix. Turn dough out onto cutting board or other surface and knead just enough to make
it come together. Divide the dough into 6 equal portions. Roll into balls and flatten slightly with hands.
Place on a greased baking sheet and sprinkle with sesame seeds, if using. Bake at 425F for 15 minutes, or until golden brown.
Watch carefully not to burn.
Makes 6. 2 net carbs each.
