EGG CUPS
8 - 12 eggs
Splash milk
salt & pepper
Fillings: onion, spinach, bacon, Canadian bacon, mushrooms, tomato, shredded cheese etc
Spray a 12 cup muffin tin with cooking spray. Fill each cup with any toppings in any amount you like. Beat eggs with milk, salt and pepper until well combined. Pour evenly into muffin cups. Fill them as full as you like. They will rise but settle back down when cool. You may need to mix up more eggs depending on how full your cups are. Bake at 350 for about 16 - 17 minutes. Makes 12.
Points will be determined by the toppings you use and for Green the number of eggs you use as well. If you leave out cheese and use a small amount of breakfast meat you can get them down to 0 points. I used Cabot 75% Light cheese and bacon and mine in the video were on Blue & Purple (1) Green (2)
