EASY BRAZILIAN BLACK BEAN STEW

2 slices bacon, chopped
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chicken broth, plus more as needed
2 cloves minced garlic
hot sauce to taste
1 teaspoon apple cider vinegar
2 tablespoons fresh chopped cilantro
2 can black beans, drained and rinsed

In a medium to large pot cook bacon until almost done.  Then add the onions and green pepper and cook until 
the onions are translucent and tender and the bacon crispy.  Add the chicken broth and scrape up any brown bits. 
Then add the garlic, hot sauce, vinegar and cilantro.  Stir to combine.  Add in the beans and stir.  If needed add
more chicken broth and cook, covered, 10 - 15 minutes.  Check on them to make sure they don't cook dry and add
more chicken broth if needed.  Before serving if you want your beans a little more soupy add in more of the chicken
​broth. Makes 4 to 6 servings.

Serve over rice.  Top with any additional ingredients you like such as avocado, tomato, cilantro, cheese, sour cream,
corn, lime juice, etc. to make a burrito bowl.
