½ cup heavy cream, room temp
4 eggs, room temp
2 ounces cream cheese, room temp
2 teaspoons lemon juice
2 teaspoons vanilla
3 drops liquid stevia or 2 teaspoons dry stevia blend
¼ cup granulated sweetener, I like Lakanto monkfruit
½ teaspoon baking powder
¼ teaspoon salt
3 tablespoons butter, for baking dish
Put butter in glass pie pan and let melt while oven is preheating to 400. Put all remaining ingredients into a blender and blend until frothy. Pour over melted butter and bake 15 - 20 minutes until puffy and golden and the center is just set. It will deflate as it cools. Store in fridge. Be sure it is good and chilled before serving for best flavor. Makes 6 servings.
