DOUBLE CHEESE MACARONI
16 ounces elbow macaroni
24 ounces 4% cottage cheese
1 stick (1/2 cup) butter, cubed
1 teaspoon salt
pepper
1/4 teaspoon garlic salt
3 cups half and half
1 cup milk
16 ounces shredded cheddar cheese
In a large pot cook macaroni, drain and set aside. In the meantime place the cottage cheese
in a food processor and process until very smooth; set aside. In the same pot as the macaroni,
melt the butter and gradually add the flour and seasoning stirring after each addition. Whisk
until smooth then gradually add milk, whisking after each addition until very smooth. Cook
and whisk about 5 minutes until smooth and thickened. Remove from heat and whisk in
cottage cheese. Add cheese and macaroni and stir well. Pour into a greased baking dish* and
bake, uncovered, 25 minutes or until bubbly.
* This makes a ton of macaroni. It will completely fill a 9 x 13, two 8 x 8 or 4 loaf pans.
If freezing wrap tightly in plastic wrap and foil. Label and freeze. Thaw before baking as
directed above.
