DILL PICKLE CHICKEN SALAD

2 pounds boneless, skinless chicken breasts, cooked and diced
6 slices bacon, cooked and chopped
1/2 to 1/2 cup chopped red onion, or to taste
1/2 cup shredded sharp cheddar cheese
6 baby dill pickles, chopped, or to taste
a little less than 1 cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon vinegar
salt and pepper, to taste
hot sauce, to taste
2 tablespoons pickle juice, or to taste

In a large bowl mix together chicken, bacon, onions, cheese and pickles.  In a separate bowl stir together remaining dressing ingredients until smooth.  Stir into chicken mixture until well combined.  Taste and add anything more you think it may need.  Makes 8 servings.
