DAVID'S BREAKFAST CASSEROLE
16 ounces shredded hashbrowns
1 chopped onion
6 eggs
1/2 cup milk
salt & pepper to taste
1 1/4 cup shredded Trader Joe's 3 Cheese Blend
TOPPINGS: spinach, crumbled bacon or sausage, mushrooms, etc
Cook hashbrowns and onions until softened then spread into greased 9 x 13 baking dish and press down. Mix eggs, milk, salt and pepper and pour over hashbrowns. Add any topping you like over the top and cover with cheese. Bake at 350* for about 30 minutes. Makes 6 servings.
Points without any toppings included are Blue (4) Purple (2) Green (6)
