CUCUMBER SALAD
4 cups thinly sliced cucumbers
6 tablespoons rice wine or rice vinegar
4 teaspoons Lakanto monkfruit sugar substitute, or your choice equal to 4 teaspoons sugar
dash salt
Mix vinegar, sugar substitute and salt until dissolved. Pour over cucumbers. Refrigerate at least 1 hour
before serving but it gets better the longer it sits. Periodically stir or shake the container to redistribute the vinegar.

enough to sufficiently cover the cucumbers. You can also taste the next day and adjust the flavors. I also think this
would be good with sliced onions!
