CRUSTLESS QUICHE LORRAINE
1 package fully cooked bacon, cooked and crumbled (or 12 ounces regular bacon, chopped)
bacon grease or oil, as needed
1/2 medium onion, chopped
3 eggs
1 1/2 cups half and half
1/2 teaspoon dry mustard powder
salt and pepper, to taste
1 cup shredded Swiss cheese
1/2 cup shredded cheddar cheese
Begin by cooking the bacon. Either way you do it put the cooked and chopped bacon in the bottom of a greased 9-inch deep dish pie plate. If you have bacon grease left from cooking the regular bacon remove all but 2 tablespoons from the pan. If you used the fully cooked bacon use 2 tablespoons of your favorite oil. I save my bacon grease so that it what I used. Heat the oil in the pan and add the onions. Cook until softened and caramelized and spread evenly over the bacon. Sprinkle with Swiss cheese and then cheddar cheese. In a medium bowl beat together the eggs until blended then add the half and half, mustard, salt and pepper. Whisk well. Pour evenly over top of cheese. Bake at 350 for about 50 - 55 minutes or until eggs are set. Makes 4 to 6 servings.
