CROCKPOT POTATO SOUP
2 pound bag of Southern hashbrowns, the cubed kind
1 can cream of chicken soup
1 box (4 cups) chicken broth
8 ounces cream cheese
salt and pepper to taste
Spray or line crockpot. Pour in hashbrowns, then add soup and broth and stir. Put whole block
of cream cheese on top. No need to cut it into chunks. Cover and let cook on low 4 hours, stirring
several times. Then turn up to high for about an hour and stir until all pieces of cream cheese have
blended into soup. Season to taste.
Makes 8 cups.
We thought it would be good with some onions added. Also that it would be a good base for
maybe clam chowder or broccoli and cheese soup.
