CROCKPOT ITALIAN BEEF
3 - 4 pound chuck roast
1 package Italian dressing mix
2 teaspoons Italian seasoning
1 teaspoon garlic powder
8 ounces pepperoncini peppers
1 can beef broth
Combine all the ingredients except the roast in a sprayed or lined crockpot. You may choose to use as
much or as little of the liquid from the peppers. Add the roast. Cover and cook on low for 6 to 8 hours or
until extremely tender. Remove meat from cooker, shred and return to the cooking liquid. Serve on rolls,
or over rice, potatoes etc.
*This was one of the Gooseberry Patch recipes and I made it as the recipe stated. It was good but I think
it could be better. I will make it again but with these changes. I would salt both sides of the roast and place
it in the crockpot. Sprinkle the dressing mix, Italian seasoning and garlic powder all over the top and surround it
with the peppers and how much ever juice you like. I would leave out the beef broth because I think it waters
down the flavor too much with all the natural juices the beef lets off. I would check a few ours in and baste
with any juices. I think this way would make a more flavorful dish.
