CROCKPOT CASHEW CHICKEN

2 pounds boneless skinless chicken breasts, cut into 1 inch cubes.
1/4 cup flour
salt and pepper to taste
1 1/2 tablespoon olive oil
1/2 cup low sodium soy sauce
1/4 cup rice vinegar
1/4 cup honey
2 1/2 tablespoons brown sugar
1/4 teaspoon ground ginger
3/4 cup of unsalted cashews
3 green onions, chopped
Coat chicken cubes in flour and add to sprayed crockpot which has been turned on high.
Make marinade by whisking olive oil, soy sauce, rice vinegar, honey, brown sugar and ginger.
Stir the chicken and pour the marinade over top. Turn crockpot to low and cook 3 hours. Add
cashews 30 minutes before serving. I also remove the lid for this last half hour because I think it
helps thicken the sauce a little bit. Serve with chopped green onions.
