CROCKPOT BREAKFAST CASSEROLE
4 cups frozen shredded hashbrowns
2 small/medium bell peppers, any color combination you like, chopped
1 small/medium onion, chopped
10 slices Great Value fully cooked bacon, cooked and chopped
12 eggs
salt & pepper, to taste
2 ounces shredded sharp cheddar cheese
2 ounces shredded Cabot 75% less fat cheddar cheese
Spray the inside of crockpot or use a liner. I sprayed my liner just in case it wanted to stick. Layer half the hashbrowns on the bottom and top with half the peppers and onions (or to taste) and half the bacon. Repeat the layers using all the ingredients. Beat eggs with salt and pepper and pour over top. Mix cheeses together and sprinkle all of it evenly over the top. Cover and cook on high for 4 hours. Makes 6 servings.
