CREAMY GARLIC MUSHROOMS
3 slices bacon, diced
3 tablespoons butter
1 teaspoon avocado or olive oil
4 cloves minced garlic
8 ounces button mushrooms, may double this amount
salt & pepper
garlic powder
1/2 cup chicken broth
1/2 cup half and half or milk/cream of choice
2 tablespoons cornstarch
2 tablespoons water
Begin by frying bacon until crisp. Remove to a paper towel lined plate and discard grease (or save
it for later like I do); set aside. To the same pan add the butter and oil. Once melted add in the garlic.
If your burner is too hot just hold the pan up above it to stir around the garlic, You don't want it to
burn, just to flavor the butter. Return to the heat and add the mushrooms. Season to taste with
salt, pepper and garlic powder. Cook about 5 - 7 minutes or until mushrooms are tender and golden
brown. Add the chicken broth first and scrape up any brown bits left behind then add the half
and half. Do not cook on too high of a heat or the sauce will break. Mix the cornstarch and water
and add to the sauce, It will thicken quickly and continue to thicken as it sits. Makes 4 servings
