CREAMY BLUE CHEESE CAULIFLOWER
1 large head cauliflower
salt & pepper
1/4 cup whipping cream
1 cup mayonnaise
1/4 cup crumbled blue cheese, or more to taste
6 - 8 slices bacon, cooked and crumbled
Cut cauliflower into bite sized pieces and either cook in the microwave or on the stovetop until it is completely done to your liking. I microwaved mine in a covered container with a few tablespoons of water for 10 minutes. Drain well, salt and pepper to taste, and set aside. Whip cream until it is just creamy and smooth. Stir in mayonnaise and mix together until smooth. Add to cauliflower and stir to evenly coat. Stir in blue cheese and bacon. Makes 6 servings.

This recipe can also be made with 2 pounds of potatoes. Cube potatoes and cook in boiling water until done. Proceed with the recipe as written.
