CREAMED SPINACH IN BROWNED BUTTER
4 tablespoons butter
20 ounces frozen chopped spinach, thawed and squeezed dry
1/2 cup heavy cream
1/4 cup shredded parmesan cheese
1/8 teaspoon nutmeg
salt and pepper to taste
Slowly melt butter in medium sized pan until browned being careful not to burn. Add the spinach and stir around to combine then add the heavy cream. Simmer and cook for 5 minutes. Then stir in cheese, nutmeg and salt and pepper. Makes 6 servings.
