CREAM OF WHEAT PUDDING

1 cup skim milk
3 tablespoons cream of wheat, the 3 minute kind
1 egg
1 splash vanilla
sugar substitute to taste, I use Truvia Sweet Complete

Add milk to medium saucepot and heat until just boiling.  Add cream of wheat and stir
with a whisk for 2 minutes.  Watch carefully to not scorch it.  In a separate bowl whisk
together egg, sweetener and vanilla.  Before adding the egg mixture into the hot cream
of wheat you want to temper it.  Take a couple spoons of cream of wheat and add
it to the egg.  Beat to combine and this will warm up the temperature of the egg so
the egg doesn't cook once it hits the hot cream of wheat.  Now pour egg into the
cream of wheat and cook and whisk for another minute or two until thickened to your
liking and long enough for the egg to cook.

I like to serve mine with more sweetener if needed, light butter and milk.  This is the creamiest
cream of wheat I've ever had.
