CREAM OF TOMATO SOUP
4 tablespoons butter
1 onion, chopped
2 teaspoons sugar
6 ounce can tomato paste
4 - 14.5 ounce cans diced tomatoes
1 can chicken broth
4 cups fat free half and half
salt & pepper to taste
Melt butter in large dutch oven and add onions. No need to saute. Add diced tomatoes, tomato paste,
sugar and chicken broth and mix well. Cover and let simmer for 1 hour then turn off heat. At this point you
can leave the soup chunky or smooth it out with an immersion blender, regular blender or food processor.
Now stir in the half and half and taste for seasoning. At this point you could add any type of seasoning you like.
I added garlic and onion powder then decided it didn't need it but you could add Italian seasoning, or anything you'd like.
Just make it to suit your taste! Makes 12 cups. You can easily cut this recipe in half if not making for a big meal prep.
