CREAM CHEESE SPRITZ COOKIES
2 1/2 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 sticks butter, cold
3 ounces cream cheese, softened
1 cup sugar
1 egg yolk
1 teaspoon vanilla
In a medium bowl whisk together flour, salt and cinnamon until blended; set aside. Using an electric mixer cream the
butter and cream cheese together until smooth. Add the sugar and egg yolk and beat until light and fluffy. Beat in
vanilla. Gradually beat in the flour mixture, scraping down the sides as necessary, until all is used up and batter is
smooth and combined.
Fill cookie press using desired disk and press out onto an ungreased, non-stick baking sheet. Bake in a preheated
350 degree oven for approximately 12 minutes. The edges should just begin to brown. Allow cookies to cool on baking
sheet a few minutes before removing to a wire rack to cook completely. Do not store while warm to avoid softening
up the cookies. Makes about 8 dozen.
