COUNTRY STYLE STEAK AND GRAVY
2 pounds beef cubed steak
3/4 cup all purpose flour*
House Seasoning
oil of choice**
non-aerosol oil spray, not cooking spray
1 can beef broth
1 cup skim milk
I like to make this in a cast iron pan but you can use any kind of pan you like. While the pan is preheating cut the
cubed steak into bite size, or a little bigger, pieces. Measure out flour into a plastic bag. Shake several pieces of steak
in the flour at a time. Once the pan is preheated add 1 tablespoons of oil and let it heat up. Add pieces of steak to hot
oil until the pan is full but not crowded. Sprinkle with House Seasoning. Because we're not using a lot of oil you'll want
to spray the tops lightly with the oil spray to moisten the flour and not have any dry spots. Brown on both sides. Don't
worry about cooking the meat it will finish off while simmering in the gravy. For each batch of steak add an additional 1
tablespoon of oil to the pan. Transfer steak to a plate as you go.
Once all the steak has been browned mix together the beef broth and milk and over medium to medium-high heat slowly
pour into the pan while scraping up the browned bits off the bottom. Return all the steak to the pan pushing down into the
liquid as best as you can. Bring up to a boil and stir the meat around again. Reduce heat, cover and continue to slowly
simmer until the steak is completely tender approximately 40 minutes. Remove the cover and bring back to a slow boil.
Cook, uncovered, until the gravy is as thick as you like. If you're not serving right away do not thicken completely as it will
thicken more as it cools. Salt and pepper to taste when serving. Makes 8 servings.
*You need more flour to coat the meat then you end up actually using. I measured my leftover flour and had only used
6 tablespoons of flour to coat the entire 2 pounds of steak so I added that much to the builder.

CROCKPOT COUNTRY STYLE STEAK AND GRAVY
This way makes a little bit different finished dish but it's still just as delicious.

Begin by browning the steaks the exact same way as in the recipe for "Country Style Steak and Gravy". You can transfer to a sprayed crockpot as you go. Once all is browned add the beef broth, cover and cook on low 6 to 8 hours or until tender. That's all there is to it. I don't add the milk or cook longer to thicken it up. We just eat it as is for a change of pace. If you'd like you can remove the gravy to a pan on the stove, add the milk or not, and thicken it up. Calculate the points in the same manner as above.

Begin by browning the steaks the exact same way as in the recipe for "Country Style Steak and Gravy". You can transfer to the Instant Pot as you go. Once all is browned add the beef broth, cover and cook on high pressure for 25 minutes. Once finished do at least a 10 minutes natural release of pressure. You can eat it as is or thicken. To thicken cancel the pressure cooking setting and press Saute. Once the liquid has started to come up to the boil mix a couple tablespoons each of cornstarch and water and stir until thickened. Calculate the points in the same manner as above.
