CORN MUFFINS

1 can whole kernel corn*
3 eggs
1 1/4 cup masa harina (instant corn flour)
3/4 cup plain cornmeal
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
Mix dry ingredients in a large bowl and set aside. In a food processor or blender add the can of corn and process until smooth. Add the eggs and process just long enough to blend them. Add the corn to the dry ingredients and stir until well combined. Scoop into sprayed muffin tins. Makes about 18. Bake at 400 for about 20 minutes. Check with a toothpick.
*the original recipe uses 2 cans of corn but I goofed and turns out we really like the texture with just one can. You can do it either way. You'll get more muffins using 2 cans.
