CORN & BLACK BEAN SALSA
1 can corn, drained
1 can black beans, drained and rinsed well
4 Roma tomatoes
1 bunch cilantro
1/2 small red onion, chopped
1/8 cup lime juice or more to taste (fresh or bottled)
1/4 teaspoon salt, or more to taste
In a large bowl add corn and beans. Cut tomatoes in half and scoop out seeds then chop
into small pieces and add to bowl along with onions. Remove leaves from cilantro stems
and chop. Add to bowl. Dress with lime juice and salt. Stir to combine. Taste and adjust
the lime juice and salt. Store. covered, in the refrigerator until serving. Serve with tortilla
chips for dipping.
