COPYCAT TACO BELL MEXICAN PIZZA
adapted from copykat.com cookbook
12 6-7 inch flour tortillas
olive or avocado cooking oil spray
1 recipe Taco Bell seasoned meat, below
1 recipe Taco Bell Sauce, below
1 can fat free refried beans, use 0 point beans if possible
1 1/2 cups shredded cheese
1 or 2 roma tomatoes, diced small
4 or 5 green onions, sliced
Spritz both sides of each tortilla with the oil spray and place on a large foiled lined baking sheet. Bake at 425 for 4 or 5 minutes or until they are just starting to brown. Watch closely because they will burn very quickly. The tortillas will crisp up as they cool. To assemble lay one tortilla on a microwave safe plate and spread with a few spoonfuls of refried beans and then with 3 tablespoons of the seasoned meat. Top with the second tortilla and spoon 1/6th of the sauce over and sprinkle with 1/4 cup (or scant) of the cheese. Microwave for 1 minute or until cheese has melted. Garnish with a bit of the tomato and onion. Makes 6.
Points are determined by the individual ingredients you use. The one made in my video was 8 points on Blue.

1 pound lean ground beef
1 1/2 tablespoons masa harina, instant corn flour
4 1/2 teaspoons chili powder
1/2 teaspoon seasoned salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic salt
1/4 teaspoon sugar
3/4 - 1 cup water
Brown meat and drain well if necessary. Once cool enough run through a food processor to break it into a finer texture more like Taco Bell's meat. Return to pot and add spices and water. Stir to combine very well adding more water if necessary. Cook over medium-low heat until most of the water has evaporated and the meat mixture has thickened a bit. Makes 18 tablespoons; enough for 3 tablespoons per pizza.

8 ounce tomato Sauce
1/3 cup water
1 tablespoon white vinegar
1/4 teaspoon chili powder
1 1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper, or to taste
Combine all in a saucepan and cook on low heat for 15 - 20 minutes. Makes enough for 6 pizzas.
