COLORFUL COUSCOUS

1/3 cup finely chopped green pepper
1/3 cup finely chopped red pepper
1/3 cup finely chopped onion
2 cloves minced garlic
2 tablespoons olive oil
1 can chicken broth
1/4 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
1 box couscous - 10 ounces

In a large saucepan heat the olive oil then add the vegetables and garlic.  Cook about 3 minutes or
until the vegetables have softened.  Add chicken broth, water, salt and pepper.  Bring to a boil.
Stir in the entire box of couscous.  Cover and remove from heat.  Let stand 5 minutes.  Fluff with
a fork before serving.
