CHURRO CHAFFLES

1 egg, beaten
1/2 cup shredded mozzarella cheese
2 tablespoons brown sugar substitute of choice
1/2 teaspoon cinnamon
While mini dash waffle iron is preheating make the chaffle mixture. In a small bowl mix the beaten egg and cheese. Pour half onto sprayed hot waffle iron, close and cook until golden brown and crisping up. Make sure to get a good mixture of egg and cheese for best results. While this first chaffle is cooking make the topping by mixing sugar substitute and cinnamon in a small bowl; set aside. When first chaffle is done cut into sticks and toss in cinnamon sugar while still hot. It will stick better. Continue by making the second chaffle with remaining egg mixture and finishing in cinnamon sugar. Makes 1 serving of 2 chaffles.
