CHOCOLATE PEANUT BUTTER PROTEIN BAKED OATMEAL
2 cups old fashioned oatmeal
1 scoop vanilla protein powder
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cocoa powder
1 egg
1/2 cup sweetner of choice, I used Truvia Sweet Complete, or more to taste
2 cups Fairlife fat free milk
1 teaspoon vanilla
1/3 cup no sugar added peanut butter
In a medium bowl whisk together oatmeal, protein powder, baking powder, salt and cocoa powder;
set aside. In a larger bowl whisk egg and sweetner until combined. Then whisk in milk and vanilla
until well combined. Add oatmeal mixture to milk mixture and stir to combine. Pour into a sprayed
9-inch baking dish. In a small bowl melt peanut butter in microwave for 30 seconds or until syrupy.
Drizz;e over the oatmeal mixture then with a butter knife or small utensil swirl peanut butter
into oatmeal. Don't completely mix into the oatmeal. Bake at 350 for 30 - 35 minutes or until
middle is set. Let cool about 15 minutes before cutting. Makes 6 servings.
