CHOCOLATE MUG CAKE

2 tablespoons self rising flour
2 teaspoons cocoa powder
1 tablespoons monkfruit or 0 point sweetener of choice
1/4 teaspoon baking powder
pinch of salt
2 tablespoon unsweetened almond milk
1 teaspoon unsweetened apple sauce
1/8 teaspoon vanilla
13 (2 grams) Lily's chocolate chips
1 gram unsweetened coconut
2 grams chopped almonds
7 grams sugar free Smucker's chocolate fudge syrup
fat free Reddi Wip, optional
Mix cake ingredients until blended. Stir in chocolate chips, coconut and almonds. If coconut and/or almonds are in big pieces put in a bowl and crush using a heavy glass or put in a little plastic baggie and crush with rolling pin. Pour into a sprayed 6 ounce ramekin or other mug. Microwave for 50 seconds. Top with chocolate syrup. You can also add a little fat free Reddi Wip if you like. Makes 1.

**I like to make little convenience packets to have on hand. Simply add all the dry ingredients including the chocolate chips, coconut and almonds to a small plastic baggie. Store all the little packets in a larger bag or other container with the recipe either written on the outside of the bag or included on a card or piece of paper. When you want a cake simply mix the packet with the wet ingredients and bake.
