CHOCOLATE COCONUT GLAZED DONUTS
½ cup Kodiak chocolate pancake & waffle mix
4 ounces water
2 tablespoons chocolate PB2
1 tablespoon water, plus more if needed
4 grams unsweetened coconut flakes*
chopped nuts, optional
Mix Kodiak and 4 ounces water until all lumps are dissolved and bake in a sprayed 6 well donut pan at 350 for 12 minutes. While those are baking mix together the chocolate PB2 and 1 tablespoon water. Gradually add in more water as needed to make it spreadable but not to thin that it dilutes the flavor. Spread onto each donut and sprinkle evenly with the coconut and nuts if using.
Makes 6. All plans 1 point per donut.
*When I originally calculated this recipe I used this amount of coconut for all 6 donuts in the recipe builder to keep the points down. But since then it dawned on me if you're only going to eat one donut at a time it stands to reason you may garnish it individually. You can get 1 gram or ½ teaspoon coconut for 0 points. This way the donut would still be 1 points but you'd get a tad more than the 4 grams divided by 6 in the total recipe. You'd just enter it separately into the tracker. Now be sure if you eat more than one to track the combined amount of coconut to get an accurate points counts. You may do the same thing for nuts if you choose to use them.
