CHOCOLATE CASHEW OVERNIGHT OATMEAL
adapted from asweetpeachef.com*
2 bananas**
2 cups plain unsweetened almond milk
2 teaspoons vanilla
1/4 cup dark cocoa powder
1/4 cup sugar free pancake syrup***
2 tablespoons sweetener of choice, I used Truvia Sweet Complete
8 tablespoons cashew butter, unsweetened
2 cups old fashioned oatmeal
cashew halves or pieces to taste
In a blender blend all the ingredients except for the oatmeal until it is smooth. Add 1/2 cup oatmeal to each of
4 pint jars and top evenly with the liquid from the blender. Give each jar a stir. Top with a sprinkle of cashews.
Cover and refrigerate overnight before eating.
*The recipe I based this from is no longer on the website so here is how I made mine.
** You can really taste the bananas in this. I will leave them out next time.
***I will increase this sweetener or add a little bit of Truvia granulated substitute because I don't think
it was quite sweet enough.
