CHOCOLATE, COCONUT, ALMOND OVERNIGHT OATMEAL
1/2 cup old fashioned oatmeal
1 teaspoon chia seeds
2/3 cup unsweetened almond milk, or milk of choice
2 teaspoons Lakanto monkfruit, or sweetener of choice
1 teaspoon vanilla
1 tablespoon unsweetened coconut flakes
1 tablespoon slivered almonds
14 Lily's stevia sweetened chocolate chips
Mix oatmeal, chia seeds, milk, sweetener and vanilla and stir to mix. Adjust the sweetness level according to your tastes. This is not very sweet with just the two teaspoons of monkfruit. Top with coconut, almonds and chocolate chips. Store in fridge for up to 5 days. Eat cold or heat in the microwave for about a minute.
