CHICKEN, POTATO & SPINACH SOUP
1 tablespoon light butter (1 point kind)
1 tablespoon olive or other oil
1 small onion
1 carrot
1 stalk celery
House Seasoning
1/4 cup all purpose flour
1/2 teaspoon dried thyme
1 can chicken broth
2 cup cooked, shredded chicken breast
1/2 bag (8 ounces) frozen chopped spinach, thawed and squeezed dry
13 ounces cubed baked, cooked potatoes
1 can fat free evaporated milk
water
Chop onion, carrot and celery into small pieces. Melt butter and oil in large dutch oven then add vegetables. Season with House Seasoning or salt and pepper. Saute until tender and almost done. Sprinkle with flour stirring to coat then slowly pour in can of chicken broth. Stir the whole time to make sure to smooth out any lumps as it thickens. Then stir in chicken, spinach and potatoes. Add the can of milk to enough water to make 4 cups total liquid and pour into soup. Simmer 20 minutes. Makes 7 servings of 1 cup each.*

* You can use less or more chicken, spinach and potatoes but the servings will change according to how much total soup it makes.
