CHICKEN, BACON & AVOCADO SALAD
This is a recipe that can make as much or as little as you like. Portion the individual ingredients "to taste".
bacon (2 slices per serving)
3/4 to 1 pound of chicken (for 4 servings)
House Seasoning or salt and pepper
chopped red onion
chopped tomato
chopped fresh cilantro
avocado (at least 1/2 per serving)
mayonnaise
Chop bacon into small pieces and fry until crispy and done. Remove from pan and drain on a paper towel lined plate but reserve dripping in pan. Cut chicken into bite sized pieces, season with either the House Seasoning or salt and pepper and fry in reserved bacon drippings until completely done. Remove to paper towel lined plate to drain and cool off a little bit. In a bowl big enough to mix the amount of ingredients you are using add the bacon, chicken, tomato, onion, cilantro and avocado. Do not skimp on the avocado because it gives it a delicious creamy consistency. Add just enough mayonnaise to bind together. Not too much. You don't want it swimming in mayo. Enjoy as is or serve over a bed of lettuce. No dressing is needed if serving over lettuce. Just mix it in really well. Makes as many servings as you want. I calculated approximately 4 net carbs per serving.
