CHEESY BAKED CAULIFLOWER
1/2 head cauliflower
8 ounces shredded sharp cheddar cheese
1 cup heavy cream (can also substitute fat free or low fat half and half)
3 eggs
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Cut cauliflower into florets, rinse, drain and put into a greased 3 quart casserole dish. Top with all but about 1/2 cup cheese: set aside. In a medium bowl beat the eggs then whisk in the cream and seasonings. Pour over top of cauliflower and cheese. Bake at 350 for 45 - 50 minutes or until cauliflower is tender. Makes 6 servings.
