CARROT CAKE OATMEAL MUFFINS
2 cups old fashioned oatmeal
1/3 cup brown sugar
1 ½ teaspoons baking powder
¾ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon cloves
1 egg
1 egg white
2/3 cup skim milk
½ cup unsweetened applesauce
1 teaspoon vanilla
2/3 cup grated carrots
¼ cup raisins
In a large bowl stir together all the dry ingredients and set aside. In a separate smaller bowl whisk all the wet ingredients until smooth. Add wet ingredients to the dry mixture and mix very well. Stir in carrots and raisins. Divide mixture evenly into a sprayed muffin tin. I use silicone cupcake liners but you may use foil liners or make them directly in the muffin pan. I do not recommend using paper liners for these muffins. Bake at 350 for 20 – 24 minutes or until set and toothpick comes out clean. Be careful not to over bake as they will dry out. Cool before storing in the fridge. These also freeze very well. I wrap them individually and then in a freezer bag or container. Thaw at room temperature, in the fridge overnight or in the microwave. Do no more than 30 seconds at a time so you don't make them tough.
