CAROLINA GOLD BBQ PORK CHOPS
6 pork chops, boneless or bone in
House Seasoning or salt and pepper
1/2 cup brown sugar
1/3 cup Dijon mustard
2 tablespoons molasses
5 tablespoons apple cider vinegar
1 tablespoon ground dry yellow mustard
1 tablespoon cornstarch
1 tablespoon water
Place pork chops in a greased 9 x 13 baking dish and season both sides with House Seasoning; set aside. In a small sauce pot add brown sugar, mustard, molasses, vinegar and dry mustard, whisk until combined and bring to the boil. Cook about 2 or 3 minutes. Remove from heat and pour over pork chops. Turn each chop over to coat really well with the sauce. Bake at 350 for approximately 20 minutes or as long as it takes for the type and thickness of pork chops you are using. Once done remove pork chops to a plate and carefully pour sauce back into the pot. Mix together cornstarch and water until dissolved and whisk into sauce. Cook over medium-high heat until thickened, about 3 minutes. Serve over pork chops. Makes 6 servings.
