BULGUR PILAF

​2 tablespoons olive oil
8 ounces mushrooms, sliced
1 onion, diced
1 cup coarse bulgur
1 can chicken broth (14.5 ounces)
salt and pepper, to taste

Sauté onions and mushrooms in olive oil until the mushrooms start to brown.  Add bulgur, do not rinse, and
sauté another 1 - 2 minutes.  Add chicken broth, salt and pepper.  Cover and cook on low for 25 minutes or until
​all liquid is absorbed.
