BRUSSEL SPROUTS WITH PARMESAN BACON CREAM SAUCE

3 slices bacon, chopped
1/2 cup chicken broth
2 ounces cream cheese, softened
1/2 cup heavy cream
1/2 cup shredded parmesan cheese
xanthan gum
1 1/2 pounds Brussel sprouts
salt and pepper, to taste

Fry bacon, remove to drain and pour off all but just a film of bacon grease left in the pan.  Add chicken broth and
cream cheese and stir to mix well. Then with a stick blender add in cream and 1/4 cup cheese until well blended. 
Thicken with xanthan gum.  Add it 1/4  to 1/2 teaspoon at a time and cook until thickened.  Turn off heat, cover and
keep warm.  Cut Brussel sprouts in half and place in a microwave safe dish with a couple tablespoons of water in the
bottom.  Cover and steam about 8 minutes or until the desired doneness. Stir remaining cheese into the sauce and
​pour over Brussel sprouts then sprinkle with bacon. Serves 6.
