BROWN SUGAR & HONEY GRANOLA

1 stick butter or margarine
1/2 cup honey
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon, or less
splash vanilla
5 cups dry oatmeal, quick or old fashioned
Melt butter, honey and brown sugar together in large pot over medium heat. Cook until bubbling. Remove from
heat and stir in salt, cinnamon and vanilla. Add oatmeal and stir until all is evenly coated. Pour onto a greased or
parchment lined cookie sheet and bake at 375° for 10-15 minutes, or until lightly browned. Cool completely on cookie
sheet and store at room temperature. After cooling, you can mix in nuts, coconut, raisins, sunflower seeds, dried fruits,
etc. before storing. The base recipe without any add-ins makes 48 - 2 tablespoon servings.
