BROCCOLI SOUP
2 - 2 1/2 cups chopped broccoli, fresh, frozen or stems*
1/4 - 1/2 an onion, chopped
1 - 15 ounce can chicken broth
1 tablespoon flour
1/2 - 1 teaspoon salt, or to taste
2 cups skim milk, or fat free half and half
1 cup shredded cheddar cheese
Put broccoli, onion and chicken broth in a soup pot and bring to a boil. Reduce heat and simmer until vegetables are
tender. Whisk in flour and salt and cook a minute or two then slowly pour in milk. Stir to combine and add cheese.
Simmer, without boiling, until cheese has melted and it's thickened as much as you like. You may also thicken with a
little cornstarch and water. Makes 8 servings.
Points vary depending on milk and cheese used.
*I used the stems from fresh broccoli. I shaved the tough outer layer from the bigger stalks then cut into chunks and
stored in the freezer until ready to use. To make soup allow to thaw, or thaw in the microwave, and chop very small.
I used my Pampered Chef hand chopper and they were the perfect size.
Please Note: If you watched the video you may notice I forgot to subtract the weight of the pot. Turns out the serving
size is much smaller by about 100 grams. And the points, which shouldn't have changed per serving, were off too.
So 8 servings are 3 points and 6 servings are 4 points on all plans. I don't know how that happened but I do apologize!
